🌱 Tofu Scramble with Vegetables 🍅
Ingredients:
- 1 block (about 14 oz) firm tofu, drained and crumbled
- 1 cup diced bell peppers (any color)
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions:
- Heat olive oil in a skillet over medium heat. Add diced onions and sauté until translucent.
- Add diced bell peppers and minced garlic to the skillet. Cook until peppers are softened, about 5 minutes.
- Stir in crumbled tofu, diced tomatoes, nutritional yeast, ground turmeric, and ground cumin. Mix well to combine.
- Cook the tofu scramble mixture for another 5-7 minutes, stirring occasionally, until heated through and slightly golden.
- Season with salt and pepper to taste.
- Optional: Garnish with fresh cilantro or parsley for added flavor and freshness.
